I read recently that you can’t go wrong with a fruit dessert in the summertime. As much as I like chocolate, I would have to agree.
This weekend I decided that the peaches from the Frecon Farms (from Boyertown, PA) stand at the Growing Roots’ Farmers Market in Malvern, PA weren’t just for snacking on or putting in our morning protein shakes, they were going to be a healthy dessert. And, I used some fresh sage from my garden (I have two sages bushes that are thriving) to add to the simple topping.
We’re gearing up for a trip to Iceland this fall so to ‘prepare’ we’ve been eating Icelandic yogurt called skyr. It turns out that skyr is classified as cheese, but it bears a stronger resemblance to yogurt – so much so that it’s found in the yogurt section. The consistency is very similar to that of Greek yogurt although once stirred it’s a bit more creamy. And, there’s a touch more sweetness. We’ve been enjoying both plain and vanilla from Icelandic Provisions. If you have access to it in your grocery store, I recommend trying it out. Plain Greek yogurt will work just fine in this recipe, too.
The key to this simple dessert is taking a few minutes to heat the peaches on the grill. Brush them with a bit of extra virgin olive oil so they don’t stick to grill grate. Then cook them so that they begin to caramelize slightly and develop grill marks on both sides. While the peaches are cooking, mix together plain skyr or Greek yogurt, honey and freshly chopped sage. Sage goes well with honey and gives it a slightly savory flavor.
You can serve the peaches hot off the grill or at room temperature. If there’s enough room on your grill, heat them up while you’re making dinner so you have one less thing to do.
Might I suggest buying double the ingredients? Peaches aren’t going to be around much longer and I think you’ll want to make this again.
Gluten-Free/Wheat-Free Note: All ingredients are gluten-free/wheat-free in this simple dessert.
Grilled Peaches with Sage-Honey Skyr | Print |
- 2 peaches
- 1 teaspoon extra-virgin olive oil
- 5 ounces plain fat-free Icelandic skyr or Greek yogurt
- 2 teaspoons honey
- 1 teaspoon chopped fresh sage
- Sage leaves for garnish
- Heat a gas grill to medium.
- Cut the peaches in half and remove their pits.
- Brush the cut side with olive oil and place cut side down on grill. Cook until peaches have developed grill marks and start to soften, about 4 to 5 minutes. Brush the tops with oil and turn over. Cook another 3 to 4 minutes until tops of peaches have developed grill marks and soft on top.
- Mix Icelandic skyr or Greek yogurt in a bowl with honey and sage.
- Just before serving, place two peach halves on a plate and divide the yogurt mixture among the four halves. Garnish with a few sage leaves.
This sounds like a perfect late summer dessert. I can’t wait to try it!
