Farmers market season is upon us. I’m thrilled that my favorite local farmers market in Malvern, PA will be opening this coming weekend. That means that local strawberry season is just around the corner and I’m excited to to make another batch of this wonderful Strawberry-Mint Syrup that I first made last strawberry season. Here I’ve mixed it with Prosecco for a light and fun cocktail but it also goes well with vodka or gold rum (variation of a Strawberry Daiquiri). Or if you’re my niece, Atlee T, you might like to try it on your morning pancakes.
This is a great drink that captures the full flavors of locally produced strawberries plus makes use of some mint that you may have growing out of control in your yard. It would make a lovely addition to a Mother’s Day meal or spring party.

- Strawberry-Mint Syrup
- 1 (750-ml) bottle Prosecco or other sparkling wine, chilled
- Fresh mint leaves for garnish
- Pour 1-1/2 teaspoons syrup into a flute glass and top with Prosecco.
- Garnish with a few fresh mint leaves.
